Beef Taco Skillet


 1lb. Ground Beef (I use Ground Turkey)
1 10oz. Can Tomato Soup
1C. Salsa
½C. Water
6 Flour Tortillas
1½C. Shredded Cheddar Cheese   

Brown meat. Add soup, salsa, water, 1C cheese. Mix well. Cut tortillas up into 1 inch chunks. Add to skillet. Stir. Cook about 5 min or until heated through. Top with remaining cheese.

Taco Soup

Shown with "Garlic Cheese Bread"

1lb. Ground Beef (I use Ground Turkey)
1 med. Onion, chopped
15 oz. Can Tomato Sauce
1C. Water
1 can Diced Tomatoes, NOT drained
1 can Kidney Beans, NOT drained
1 can Diced Green Chilies, NOT drained
1 can Whole Kernel Corn, NOT drained
1 can Chili Beans, drained
1 pkg. Taco Seasoning (I prefer McCormick Cheesy Taco)
Shredded Cheddar Cheese
Sour Cream
Tortilla Strips

Brown meat. Add onion. Saute until tender. Add taco seasoning. Mix well. Set Aside. In Crockpot combine tomato sauce, water, diced tomatoes, kidney beans, green chilies, corn,  and chili beans. Stir to combine. Add meat mixture. Stir to combine. Cook on low heat  2-4 hours. Garnish with shredded cheese, sour cream, and tortilla strips.

FREEZABLE: Allow leftovers to cool completely. Store laying flat in a freezer baggie for use another night. Reheat in crockpot or saucepan until heated through. May need to add extra water once reheated to acquire desired consistency.

Lasagna


1lb. Ground Beef (I use Ground Turkey)
1 Tbsp. Olive Oil
1 Tsp. Red Pepper Flakes
1 Cloves Garlic, minced
1 13oz. Can Tomato Paste
3 Tbsp. Sugar
Salt & Pepper, to taste
1 28oz. Can Whole Tomatoes
1 med. Onion, chopped
1 Green Bell Pepper, chopped
½ C.+3 Tbsp. Parmesan Cheese
1 16oz container Cottage Cheese
2 C. Shredded Cheddar
2 C. Mozzarella Cheese,shredded
1 pkg. Oven Ready Lasagna Noodles

Brown meat. Set Aside. In a large saucepan, combine oil and red pepper flakes, saute about 1 min. Add garlic and saute another min. Add tomato paste and 2½ (tomato paste) cans of water. Bring to a boil. Reduce heat. Simmer. Add sugar, salt, and pepper. In a blender or food processor puree can of whole tomatoes and add to saucepan. Add onion and bell pepper. Simmer about 30 min until sauce begins to thicken. Add ½ C parmesan cheese and ground meat. Simmer 10 min. Cool 10 min. Place thin layer of sauce in bottom of 9x13 baking dish. Layer of noodles. Layer of sauce. Layer of ½ cheddar and mozzerella cheese. Layer of noodles. Layer of sauce. Layer of cottage cheese. Layer of noodles. Layer of remaining sauce. Layer of remaining cheeses. Sprinkle with 3Tbsp. parmesan cheese. Bake @350 1 hour. Cool before you cut:)   

FREEZABLE: See "Freezer How To" for detailed instructions.  You can use regular Lasagna Noodles (not boiled) if you can't find oven ready noodles. This can also be done with homemade noodles if you prefer a softer texture. When ready to use, remove from baggie and place in pan. Cover with foil and bake 350 for an hour, give or take (until heated through) Remove foil for the last 5-10 min to brown and crisp the top:)

Taco Ring

Should have been more creative and put a tablecloth underneath...sorry:( Pretend the stove top is pretty!!

 1-1½ lb ground Beef (I use Ground Turkey)
1 package dry Taco Seasoning mix (I like McCormick Cheesy Taco)
1¾ C. Shredded Cheddar Cheese
2Tbsp. Water
1 Egg White, lightly beaten
2 cans Refrigerated Pop Can Crescent Rolls

Optional Toppings:
Salsa
Sour Cream
(That's all I use)
Lettuce, shredded
Tomato, diced
Onion, diced
Olives, sliced


Brown meat. Add seasoning packet and water. Stir to combine. Add 1½C. cheese. Stir to combine. Set aside.  Pull apart and roll open crescent rolls leaving them in flat triangles. On a round pan (I use a pizza stone) Arrange triangles, slightly overlapping the bottoms of each triangle, forming a circle around the edge of the pan (the tips of the triangles will hang over the pan for now) Press overlapping edges of triangles  down flat. Scoop meat mixture (I use an ice cream scooper) in a circle around the bottom edges of the triangles that you just pressed together. So now you have a ring of meat scoops covering the bottom edges of your triangles. Pull the tops of the triangles over the top of the scoops of meat and tuck the vary tips of each triangle underneath the ring. Meat filling will show a little between each triangle. Brush the top of the ring with egg white and sprinkle with remaining cheese. Bake @ 375 for 25-30 min.

Cheeseburger Meatloaf

1lb. Ground Beef (I use Ground Turkey)
10 slices Bacon, cooked and crumbled
8 oz. Package Cheddar Cheese
2 Large Eggs, lightly beaten
¼ C. Mayo
¼ C. Breadcrumbs
1 Tbsp. Worcestershire Sauce
¼ Tsp. Salt
¼ Tsp. Pepper
1/3 C. Ketchup
2 Tbsp. Mustard
3 oz. French Fried Onion

Combine meat, crumbled bacon, shredded cheddar, eggs, mayo, breadcrumbs, worcestershire, salt, pepper. Mix well. In a small bowl combine ketchup and mustard. Stir ¼ C. ketchup and mustard mixture into meat mixture. Press meat mixture into a loaf pan (9x5x3) Spread remaining ketchup and mustard mixture over top of meat mixture. Bake 40 min. at 350 degrees. Top with french fried onions. Bake another 10 -15 min. or until meat is no longer pink.

FREEZABLE: Using the "Freezer How To" guidelines make meatloaf all except for topping with French Fried Onions. Freeze and store for later use. Allow to defrost in Fridge and cook according to recipe directions adding French Fried Onions at the end:)

Taco Salad


 1lb. Ground Beef (I use Ground turkey)
2-10oz.cans Pork and Beans
1 packet dry Taco Seasoning powder (I like McCormick Cheesy Taco)
1 bag Fritos (I use Chile Cheese Flavor)
Sour Cream
Chedder Cheese, shredded
Tomato, diced
Onion, diced
Lettuce, diced
olives, sliced
Salsa
Hot Sauce (I like Franks Red Hot)

Brown meat. Add seasoning packet. Add both cans pork and beans. Mix well. Dice, shred, and chopped veggies and such. Place a layer of  Fritos on bottom of a plate. Use another plate to smash them. Layer meat on top of chips and than layer on whatever topping you desire. I like to stir mine around and get it all mixed together on my plate but not everyone does:)
